FROM BEHIND THE BAR: WORD FROM WIDGE


ASIA PACIFIC, 13 OCTOBER – Not many people in our industry can say they have their face on a bottle of gin, yet the award-winning Australian bartender Jason ‘Widge’ Williams can. Having been around gin nearly his entire life, we tap into our Head of Advocacy’s love affair with all things gin and how his face landed on the packaging of one of Asia’s favourite craft gins.

A young 13-year-old Williams picked up the nickname ‘Widge’ when he first dipped his toes into the hospitality industry, washing dishes at a local pizza shop. The nickname stuck with him as he progressed through the bar industry, riding the wave of the early 2000s cocktail scene, falling in love with the creativity, history and social dynamism that great drinks could bring.

“There is something absolutely magical and rewarding when combining ingredients, and flavours and introducing guests to new drinking experiences,” Williams says.

Shaking and stirring his way into the world of extraordinary spirits, Williams won the Beefeater 24 Global Bartender Competition, which took him around the globe, exploring gin distilleries – and that was when he properly fell in love with the category.

“I’ve spent a decade visiting distilleries and I’ll never not miss the heady, spicy smell that just hits your nose once you’ve opened the distillery doors. It is hard to not love a genuinely handcrafted product. From the selection of natural ingredients, sourcing the best botanicals, and weighing by hand – it is extremely hard to totally automate or digitalise the gin business. It’s a hand-touched process, and you don’t get it in many other mainstream other spirits categories.”

To fall for gin is to embark upon a lengthy journey. Before collaboration was a norm in the spirits industry, Williams went on to open a gin speciality bar with 80 gins in Sydney, The Rook and was the first to collaborate with Four Pillars, one of the biggest Australian gin brands, in co-creating the Four Pillars Spiced Negroni Gin.

By now known as the ‘gin guy’, Williams further enhanced his reputation when he arrived in Singapore and was part of the team to launch the opulent ATLAS Bar with Proof & Company. Heavily focused on the art deco period, the bar celebrates gin with a carefully curated collection of over 1,300 gins including an Archie Rose Distilling Co. collaboration and a permanent St George’s Distillers ATLAS Orange Gin. From this point, Williams became a bonafide gin aficionado; running the Juniper Society and became the first person from Singapore to be inducted into the London Gin Guild. Not surprisingly, the title Master of Gin at ATLAS was bestowed to Williams.

So how did Widges Gin come about?

“Proof & Company was working on True Believers range of brands. The whole ethos of True Believers is to bring world-class spirits to the mainstream by promoting independent drinking, working with world-class distillers and being utterly transparent so that we can bring to drinkers a spirit valuable to the modern-day bartender at a competitive price point.

Spencer Fornhart, one of our founders, recognised my experience and reputation for gin education and advancement and tapped me to work on the developing of our gin to grace the bars of Asia Pacific. I was recruited into this new exciting product launch.”

“The first thing I thought of was, “What does the bartender actually need, especially when there are already a plethora of amazing gins?” This gin has to really work in a G&T and a dry gin martini.”

The botanical perspective was considered next. For this, he gravitated towards a classic backbone of juniper and dry herbs, but they loved the idea of elevated citrus. Williams loves that citrus element of gin in sour-family cocktails such as the White Lady and Aviation – both done with an orange liqueur. “Orange is also a very dominant character in a negroni and in a stirred cocktail like a Hanky Panky and has a lot of uses: tea, cleaners, repellent, cosmetics, cooking,” says Williams. “It’s like vanilla in the cocktail world. I then considered the things I love that will bring out the orange and juniper – cardamom”.

They took this brief to Langley in the UK and perfected the recipe — it was now a proper gin, with a big whack of orange and the firm suggestion of cardamom. Now, their gin just needed a brand.

“When Spencer unveiled the branding and mock-up – I swear, I was ambushed,” Williams says. “My first thought was that he was joking. I expected a couple of options and directions, but how surreal it was when I saw a caricature of my face and ‘Widges Gin’ on the label.

“Then again, knowing it was Spencer, it’s pretty set in stone,” laughs Williams.

Forhart explains that the nickname ‘Widge’ is unique and could be interpreted as old-world English, eccentric in kind of a way, fitting into the trend of quirky names from other gin brands. Today, the word ‘Widges’ is more than just a nickname.

As Williams collaborates with different gin brands in Proof Creative to create speciality gin bars and builds the line extension for True Believers, what’s left is his most ambitious gin idea to date: to create a gin with ingredients from the Antarctic.

“I personally adore gins that represent their places of origin. Like how Terai uses local spices sourced from Asia’s largest spice market to Vietnamese gins with ingredients foraged by native tribes in the countries’ jungle. The spiritual respect for spices and botanicals representing where they (the gins) come from is highly admirable. The layers from these gins will be sure to create the most iconic gin cocktails. I haven’t heard of a gin coming from the Antarctic and maybe there is something growing there that we can use in a gin!”

PROOF CREATIVE ANNOUNCES ITS FIRST MAJOR PROJECT IN EUROPE


GENEVA, 22 AUGUST – Geneva will be home to the first Proof Creative project in continental Europe with the opening of Silverback slated for spring of 2023.

Construction is underway on this highly anticipated venue, located inside a stunning 16th-century building in the Old Town of Geneva. The Old Town or “Vieille Ville”, is an ancient maze of cobblestone-lined streets and picturesque squares, filled with art galleries, and historical sights telling the stories of Geneva’s long and colourful history. Silverback is conveniently located in the heart of the historical centre, just a short stroll from the city’s central shopping district and just a stone’s throw from popular outdoor cafes and restaurants. This archaeological treasure is being restored and provides the interior backdrop to the dual-level bar.

Silverback will house a monumental back bar of spirits with a special focus on Scotch Whisky, Bourbon, Rye, and whiskies of the world including boutique bottlings found in non-traditional whisky-making countries such as Germany, Sweden and of course Switzerland. It will be supported by a sharp list of European wines, high-quality beers and an inspired offering of seasonal cocktails aimed to provide a cocktail for any palate.

“My dream for Silverback is to indulge clients in a unique atmosphere of historical significance whilst offering 500 fabulous whiskies as well as great live music,” says Jean Michel Aubry, the founder of the project. Director of Operations, Roderick Boerma, adds, “This will be a one-of-a-kind project housing an enormous amount of energy. The excitement of being able to do what you love in this historical venue is just incomparable.”

Geneva has incredible potential to be a bar destination. It’s an international city with many global companies calling it home so the population is there. Its proximity to other great cocktail cities like Paris and Zurich as well as all its neighbouring countries makes it an ideal weekend destination too. The floor below, in the centuries-old cellars of the building, will house the darker, and seductive sibling of Silverback that will come alive with a revolving live music program featuring local and international musicians. The drinks offering of Silverback will be extended to the floor below with an additional focus on Champagne.

Silverback will share the ground floor of this magnificent edifice with two other venues; a bright, contemporary neighbourhood wine bar as well as a yet-to-be-named restaurant next door, occupying the final tenancy. This multi-venue building will cement itself as a must-visit destination for the city.

Proof Creative’s involvement began in late 2021 and will implement its renowned ’20 Pillar’ creative process which includes early conceptual development, bar functional layout, major equipment sourcing, OS&E curation, spirits curation, drinks development and pre-opening support and training.

28 HONGKONG STREET REUNITES FRIENDS TO CELEBRATE SINGAPORE'S ACHIEVEMENT IN ASIA'S 50 BEST BARS AWARDS


SINGAPORE, 29 APRIL – Singapore’s ever-changing cocktail scene has never been better thanks to its diversity, excellence and innovation, a fact reinforced by the 7th edition of Asia’s 50 Best Bars, held in Bangkok, Thailand on Thursday evening. Since its very first edition in 2016, an average of 10 Singapore bars appear on Asia’s 50 Best Bars list each year – which is no easy feat.

That’s in no small part thanks to the strength of the Singapore bar community. Despite the many difficulties the food and beverage industry has confronted during the pandemic, the Singapore bar community has been resilient, innovating, embracing new technologies, and facing these challenges together. Now, the easing of Covid-19 measures has sparked optimism and a sense of revival across the city.

To celebrate, 28 HongKong Street invited industry friends to watch the live stream reveal of Asia’s 50 Best Bars 2022 on 28 April, Thursday. The crowd cheered as Head Bartender, Elliot Pascoe, and Floor Manager, Nalini (Lin) Balasundaram called in live from the award ceremony at Bangkok’s Mandarin Oriental Hotel, alongside some of the brightest stars of the region.

After two years of virtual screening, it feels just like old times when we were all together – determined to prove what we could do. It is moving how resilient our industry has been, in order to make this happen, but we never gave up hope that we would make it back stronger than ever, ” says Lin.

It was an emotional reunion which saw bartenders, bar owners and close friends reconnecting in anticipation and elation at what unfolded onscreen, with Singapore bars claiming 11 spots on Asia’s 50 Best Bars list. With special awards such as The Roku Industry Icon awarded to Nutmeg & Clove’s Colin Chia and MO Bar achieving the Nikka Highest Climber award after jumping 28 places over last year, Singapore’s bar scene has never been better.

28 HongKong Street landed at #49 on this year’s list, making it the sixth consecutive year that the bar has made a showing on the list, a reflection of how despite celebrating its 10th birthday last year, the bar continues to shape Singapore’s drinks culture and further grow its reputation as a global institution of fine drinking.

The 28 team set out with the goal to bring something that was missing in Singapore – an institute dedicated entirely to fine drinking and education. And now, here we are today – still maintaining a position among many other fine contenders,” says Peart, “Everyone who comes through our doors is important to us, and we would like to thank you for all the support and love given to us.”

The night was about acknowledging the hard work our bar community has done to help make this industry what it is today and celebrating its achievements this year. A special mention goes out to Jigger & Pony, Singapore and COA, Hong Kong who were judged Asia’s Best Bar 2022 #2 and #1 respectively for the second consecutive year – breaking records with their outstanding performance and hospitality. SULLIVANS COVE, NAMED ‘CRAFT PRODUCER OF THE YEAR’ AT THE WORLD WHISKIES AWARDS 2022


AUSTRALIA, 14 APRIL – Sullivans Cove Distillery in Hobart, Tasmania, has won many awards for their quintessential small-batch luxury whisky in the past few years. Now the distillery is celebrating once again after taking home a number of awards in the Rest Of The World category at the World Whiskies Awards 2022. The result comes after last year’s prestigious claim by American Oak Old & Rare (HH0108) for Best Australian Single Cask Single Malt (13 – 20 years) in 2021.

The World Whiskies Awards 2022 ceremony has finally returned to London for an in-person event after two years – and what an event. Held at the Honourable Artillery Company in London on 24 March 2022, the industry’s finest gathered to celebrate the global winners of the 2022 Icons of Whisky and World Whiskies Awards, as well as honouring the latest inductees to the illustrious Whisky Magazine Hall of Fame.

Among this year’s winners, Sullivans Cove has been named ‘Icons of Whisky Craft Producer of the Year’. The award is a recognition of the team’s hard work and focused attention to every detail of the whisky-making process, allowing them to craft single cask whisky of the highest standard.

In addition to winning this title, they were able to bring home two other prestigious awards with Distillery Manager of the Year going to Heather Tillotts and Visitor Attraction Manager of the Year going to Ally Bhana. 28 HONGKONG STREET ANNOUNCED YEAR-LONG PARTNERSHIP WITH AWARE SINGAPORE


SINGAPORE, 22 MARCH 2022 – This month, to celebrate women’s growing empowerment in the bar industry, 28 HongKong Street has announced its year-long partnership with AWARE Singapore, the premier organisation advocating gender equality across Singapore. Founded in 1985, the Association of Women for Action and Research continue to champion the right of all individuals to have an equitable say in education, employment, and opportunity.

28 HongKong Street is celebrating women throughout March by spotlighting three barrier-breaking alumni: Charmaine Thio, Desiree Silva, and Jessica ‘Hutch’ Hutchinson. Each of these luminaries have called 28 HongKong Street home at one point in their careers, returning to curate a list of four cocktails available at 28 HongKong Street for the month of March, with 10 percent of the drinks’ sales donated to AWARE, Singapore.

A pioneer of 28 HongKong Street, Desiree Silva (known affectionately as Dezzy), ran the floor with grace and confidence as floor manager. Today, Desiree is the co-owner of Sago House, which debuted at number 49 on Asia’s 50 Best Bars in 2021, and at number 63 on The World’s 50 Best Bars 2021. Silva and her co-owners built Sago House from scratch, and courageously opened the bar during Singapore’s lockdown phase. Despite the challenging conditions, their entrepreneurial mindset and passion enabled them not just to survive, but to thrive. That success allowed them to open Low Tide, a tiki-inspired bar serving up tropical cocktails and food with a local twist — all within a year of opening Sago House.

Charmaine Thio’s journey at 28 HongKong Street began in 2015 where she started out as a barback and worked her way up to become head bartender. Since then, she has embarked on a new adventure as the regional brand ambassador of Hendrick’s Gin.

Jessica ‘Hutch’ Hutchinson, Co-founder of No Sleep Club

Jessica ‘Hutch’ Hutchinson spent four years at 28 HongKong Street, working her way up from part-timer to front of house manager before becoming a personal spirits advisor for EC Proof. After leaving EC Proof, Hutch co-founded No Sleep Club in 2019, a venue that focuses on coffee and cocktails alongside some of the tastiest dishes in Singapore. With such a carefully curated menu and great hospitality, No Sleep Club landed at number 8 on Asia’s 50 Best Bars 2021 and at number 26 on The World’s 50 Best Bars 2021.

“I think it’s incredible that the AWARE is pairing up with venues that are inclusive in hiring and staffing, and also ensuring that their venues are inclusive and a safe space — especially for nightlife, which is a predominantly male-centred universe.”

AWARE is a non-for-profit organisation, and 28 HongKong Street is honoured to contribute to this charity that actively supports UN anti-discrimination declarations regarding sexual harassment, gender discrimination, age opportunity awareness, and strengthening the laws, policy, and mindsets pertaining towards the lives of women.

“We just wanted to give something back to the community and strive in all aspects to make it an industry we can truly be proud of,” says Christopher Peart, General Manager of the celebrated Singapore cocktail bar.

After March and through the rest of this year, each month will see 28 HongKong Street collaborating with a different cocktail bar from around the world. Our global friends who embrace diversity and support the cause will be creating a special cocktail exclusive for 28 HongKong Street, with those proceeds being donated to AWARE.

ASIA PACIFIC, 8 MARCH 2022 – “There is no limit to what we, as women, can accomplish,” said Michelle Obama. Bartenders, bar managers, beverage directors, creators, distillers and ambassadors – whether it be by remembering how women are some of the most influential and powerful individuals we know, or just how they inspire us with their passion, creativity and unbridled dedication to their craft in the drinks and hospitality industry, we are honoured to have them in our lives and taking the time to really celebrate them.

To mark International Women’s Day, we sat down with four Proof’s women as they shared their love for the industry and even, tips for future generations.

Favourite Past times: Bike-riding with her toddler in tow and hosting friends for dinner.

Best Proof Moment: To see her finance team come through it together and be stronger after the toughest two years in any of our personal and professional lives.

Born in Kuala Lumpur but moved to Melbourne at a young age, Elaine Hardiman considers herself a proud Aussie with an international background. Even with extensive experience in the fashion and retail industry, she had a smooth transition into the F&B industry when she joined Proof. “Of course, it also helps that I had studied many of our products closely over the years as I visited cocktails bars from New York to Shoreditch to Lan Kwai Fong,” she quipped.

“As quoted from one of the most inspirational female leaders, “Motivation comes from working on things we care about. It also comes from working with people we care about.” Proof has been and always will continue to be a great place to build a career. The business I joined 4 years ago compared to the business today is so different and yet has retained the same ingredient that made me want to join in the first place, a thirst to be the best in the industry!”

From humble beginnings in Far North Queensland (the rum state), Jordan Ashleigh found her love of bartending and the hospitality industry when she moved to the United Kingdom in 2015. From masterclasses, local competitions, and bartending across the country, our bubbly and energetic member immersed herself in the cocktail country before joining Proof in 2018.

A huge believer in trying everything to find what you are good at (and not good at), our Brand Manager for Proof’s Australia & New Zealand shares her favourite quote from Paulo Coelho, “Accept what life offers you and try to drink from every cup. All wines should be tasted; some should only be sipped, but with others, drink the whole bottle.”

Having worked in technology and healthcare companies in the Silicon Valley, joining the Hospitality and Spirits Industry was the last place Trisha Chan thought she would ever be. “My time at Proof has been an amazing journey so far because I realized that my legal skills are easily transferrable from industry to industry and even align with my personal interests which makes it even more fun!”

When asked what advice would she offer to her younger self and future generations, “I know it sounds cliché, but don’t give up on your dreams or goals. Always be curious – you never know where life will take you or what opportunities are around the corner!”

And she found this in the hospitality industry – from the Novotel in Bangkok, Club Med in Phuket, and Wynn Palace in Macau to her current role as Sales Manager in Proof & Company.

CELEBRATING WORLD BARTENDER DAY WITH OUR ADVOCATES OF EXTRAORDINARY SPIRITS


SINGAPORE, 24 FEBRUARY 2022 – What started out in a cocktail competition became a popular day that is celebrated in the global bar industry. Toasting to the creativity and talents of those important people tending bars all across the globe, World Bartender Day pays tribute to individuals who have shaped the industry for future generations throughout history.

To show the love and appreciation for our advocates who are passionate about sharing their knowledge of spirits with people around the world, here are five incredible individuals who are making waves in their community. These bartenders run the gamut from industry-renowned professionals to the up-and-coming bar talents. From Singapore to Sydney, Shanghai, and Hong Kong to New Zealand, let’s take a look at what makes these bartenders and their signature serves exceptional.

Nicholas Edward Alexander, Head Bartender at Writers Bar, Singapore

With almost a decade of bartending experience at numerous prestigious bars and restaurants in New York City, Nicholas brings with him a wealth of knowledge and mastery to Writers Bar at Raffles Singapore.

His signature drink “Guilty Pleasure” is reminiscent of a 1950’s pitcher of Old Fashioned with muddled oranges and cherries but in an exceptional form.  The rye brings spice to balance the fruit while the bourbon reminds him of his favourite dessert, the banana bread.

Lorenzo Antinori, Beverage Manager at Argo, Hong Kong

Lorenzo Antinori, the Four Seasons Hotels and Resorts group bar guru has over 10 years of experience in the F&B scene across Europe and Asia and masterminded the rise of several globally renowned bars. As a believer in experiential cocktails, he strives to create story-driven drinks through innovative techniques.

The Single Origin Negroni was inspired by his visit to Malaysia, where he saw a cocoa pod and thought how cool it would be to age a Negroni inside. There’s much to admire about this drink at Argo with such inventive ingredients and winning flavours.

Meet Andrea Marseglia from New Zealand who has over a decade of international bar experience. With a focus on seasonality and foraging, it’s no wonder that this Aperitivo & Cocktail bar is an oasis of sustainable practices.

Not only does he enjoy making all sorts of cocktails, but the co-founder of Neighbourhood Foraging also enjoys using ingredients sourced locally. Inspired by the fauna on the way to Bluff Hill, Andrea foraged New Zealand’s native ingredients and infused them into bourbon to create an earthy taste while enhancing those caramel and coconut notes of the Ferrand Cognac. The result? A uniquely delicious Bluff Hill Sazerac.

Recently crowned champion of Diplomatico Rum’s Artisans of Taste competition in China, Eason Guo perfected his craft to create this sustainable and impeccable cocktail. Leveraging two types of Diplomatico Rum with sour plum soup and plum bitters, Guo was able to obtain a more robust and well-rounded flavor in his signature Diplomático serve, Hao Ye.

The rich aroma of Diplomático Rum takes the Head Bartender of The White Moth back to the classic Beijing specialty – sour plum soup. Pushing the boundaries further by using up all parts of the coconut, we are presented with a memorable drink.

Hélène Bord, Bartender at Apollonia Bar, Sydney

Hélène Bord is a 1/3 oz Spanish, 1/3 oz French, 1/3 oz American who’s still figuring out ounces while in OZ. Little did she know when she made the move from Spain to Sydney for her studies that she would develop a love for hospitality. This young bartender’s current passion project is making cocktails that tantalise all senses and creating unforgettable experiences for her guests.

With Dirty Gimlets (her signature drink), she can make sure anyone visiting Sydney gets the perfect summer cocktail experience they deserve – not to mention one that embodies her passion for hospitality. Nothing shouts of a Mediterranean summer more than a refreshing citrus-forward cocktail with marinated olives.

PROOF CREATIVE CELEBRATES THE LAUNCH OF MARY MARY, A LUXURY HOTEL BAR LOCATED WITHIN THE TASMAN HOTEL, HOBART


HOBART, 10 FEBRUARY 2022 – The Tasman, A Luxury Collection Hotel, Hobart has finally swung open its doors and it is home to Hobart’s newest cocktail bar, Mary Mary. A seductive, sandstone-wrapped room lined with red ochre leather banquettes lit with the glow of brass table lamps. It is truly a captivating addition to the ever-growing Tasmanian bar industry.

The name stems from the heritage building’s origins; the former St Mary’s hospital constructed in 1847. It has now been reimagined as part of the Tasman, A Luxury Collection Hotel, Hobart, and Parliament Square, located in the heart of the city and just a moment from the famous waterfront. You’ll find Mary Mary tucked away on the other side of the hotel with its discreet entrance off Salamanca Place. Through the doors, you will be greeted by a host that may guide you to a secluded table by one of the fireplaces or a seat at the padded leather bar.

The vision for the beverage program at Mary Mary was heavily influenced by its location and terroir.

Hobart’s food and drinks culture has long commanded global attention and attracts a discerning guest seeking a compelling experience, which offers us an impressive foundation to build upon.

We very much wanted to put Tasmania front and center when it came to the concept. It only made sense to support and celebrate the incredible artisans, producers, distillers, brewers and winemakers. As you read through the menu, you might be surprised to find classically inspired drinks but as you read further, you’ll see that every drink has been re-inspired and then re-constructed with a broad Tasmanian brushstroke.

Guests that arrive at the doors of Mary Mary will no doubt have undergone a journey to get there. For international visitors, even more so. Through its approach to cocktails and fine drinking, the team aim to satisfy and delight their guests for their imbibing needs whilst also presenting something uniquely Tasmanian. Drinks maintain a commitment to quality, seasonality and freshness as well as an unwavering ethos to approach the cocktail as if it was being made for the very first time in Tasmania.

The Signature Martini

Their Signature Martini is a mixture of a Tasmanian Gin of the moment married with Mancino Secco Vermouth and lifted with aromatized verjuice from Providence, Northern Tasmania.

Whisky Highball

The Whisky Highball represents this perfectly using a locally made Whisky and topped not with soda, but with a sparkling mead from a Derwent Valley brewer. Crowned with a locally foraged Wattle leaf, the drink is bracing and intriguingly complex.

The beverage offering at Mary Mary is guided by Bar Manager Ronán Kavanagh. A hospitality veteran with international and local experience and an impressive distilling background to boot. He is the guardian of the commanding back bar of spirits as well as the lead in sourcing ingredients across Tasmania from Braeburn apples of the Huon Valley to the locally foraged native succulent, pigface, found growing on the coastlines.

In the near future, the bar will reveal The Coal Room. An old coal chute from the building’s original structure will be repurposed to house Mary Mary’s most exclusive, rare, and old spirits as well as oak barrels aging away locally made spirits sourced from neighbouring distilleries. Furthermore, guests can expect a regular schedule of programming to include intimate live music nights as well as the inaugural gathering of the Tasman Spirit Society; an inclusive group of spirits enthusiasts that come together to be led through a series of tastings hosted by distillers, winemakers or brewers.

Proof Creative’s involvement began in early 2018 implementing its renowned ’20 Pillar’ creative process. Led by Senior Bar Consultant, Charlie Ainsbury, work included the early concept development phase, bar functional layout, OS&E curation, sourcing through to spirits curation, drinks development, and pre-opening support and training.

The opening of Mary Mary is the latest in a long line of collaboration between Proof Creative and Marriott International.

28 HONGKONG STREET ANNOUNCES NEW LEADERSHIP TEAM, HOT ON THE HEELS OF RENEWED GLOBAL ACCLAIM


SINGAPORE, 19 JANUARY 2021 – New faces join recently promoted (and much-loved) team members to take the reins of Proof & Company’s very own award-winning cocktail bar, 28 HongKong Street.

28 HongKong Street is the ‘little bar that could’ and Proof & Company’s spiritual home; it’s the clubhouse for the local bar industry and an icon of the pan-Asian bar world.  28 HongKong Street built its reputation through its commitment to elevated drinking experiences, quality ingredients, creativity, craft, music, food, and hospitality. But after 10 years of 28 HongKong Street, the bar is now most famous for its people. Some of Asia’s best bars and global brands are now represented by old teammates and the old rosters read like a ‘who’s who’ of the Southeast Asia bar industry.

That’s why the new leadership group — spanning across the drinks, food, and operation of the bar — is so important. They are embarking on a period of transition, a period that will give 28 HongKong Street a new outlook for its next 10 years.

28 HongKong Street’s new General Manager Chris Peart is excited about this team and the next chapter of 28 HongKong Street. Hailing from Australia, Chris comes with loads of small bar experience running some of Brisbane, Melbourne and Shanghai’s most-loved cocktail destinations. But for the last 10 years, he immersed himself in the world of luxury hotel bars across China, notably opening EDITION Shanghai and Rosewood Beijing.

I am grateful for having this amazing opportunity to join the 28 HongKong Street and Proof & Company team. I have admired Singapore from afar and I look forward to being a part of its community. Furthermore, I am honoured to continue the work that has been done over the past 10 years serving up tasty drinks matched with world class hospitality.

Nalini Balasundaram (Lin) has been running around on the floor at 28 HongKong Street, hosting guests and serving up cocktails for over four years. Singaporean and a long-time part of the collective, she knows the venue, loves the bar, the bar loves her and she’s excited about her newly defined role.

A respected and well-known figure of the Australian bar scene, Elliot Pascoe has plied his trade at some of his country’s most well-known bars such as The Baxter Inn, Bulletin Place and Death & Taxes. Known for his high energy approach and dedication to learning and creativity, Pascoe looks forward to working with the bar team on new drinks and getting to know the Asian bar scene.

28 HongKong Street is a doyenne of hospitality and a bulkhead of good drinking. I am looking forward in contributing in some small capacity to a grand legacy. It is a privilege to serve, I look forward to doing heaps mad stuff into the future and giving back to a community that gives us so much, so richly.

Perhaps as famous as the drinks or the music at 28 HongKong Street is the food, and that is in no small part thanks to Head Chef, Melvin Tan. He is integral to the success of the business and making sure the guests are fed, and the food is at the high standard we expect. Continuing his calm stewardship of the kitchen, Tan now takes on greater authority in the venue.

From finding the right combination of ingredients, experimenting with proportions to finally making it look and taste great, everything we put out goes through the thought processes of many in our team,” says Tan. “We’re a tight bunch who truly love the bar life and appreciate the seriousness behind the complexities of our craft. It’s not work anymore, we love living it.

Lukas Kaufman has been a rock of the 28 HongKong Street bar team for more than four years now, earning the respect and admiration of the team and the Singapore bar industry. In the newly minted role of Operations Manager, he will report to the GM and take full responsibility for making sure the venue ‘runs’, while continuing in his role of Senior Bartender in a part time capacity.

I can’t be more proud and honoured to be part of 28 HongKong Street for several years. I’m super excited to work with our new and talented additions to the 28 HongKong Street family. We as a team are looking forward to new horizons and experiences — and bringing them to all our guests, patrons, friends and peers.

While it’s important to introduce and encourage the new wave of leaders at 28 HongKong Street, it’s important to acknowledge the legacy that has been left behind by the previous team and give shout-outs to the existing bar team. Justin Pallack and Ronan Keilthy specifically deserve mention for their long dedicated service. They both left 28 better than when they arrived which is our test of success.

Furthermore, 28 has a fantastic team that ‘do the thing’ on a nightly basis. Long-serving bartenders Naz, Chris, and on the floor Guru, deserve special mention for their commitment and positivity.

28 HongKong Street and its team have some exciting things planned for 2022: a continued celebration of its 10 years of service, a new menu concept, a cocktail community program, and more. The team is full of enthusiasm and is looking forward to adding to 28 HongKong Street’s reputation as a hub of appreciation and excellence in the drinking experience.

“There’s something about this place that leaves you wanting more, to keep you coming back for more,” says Lin. “The pandemic may have put a little damper on the F&B industry but this only proves that nothing will stop us from bringing new and exciting experiences to the table and showing people a good time as always.”

Hidden behind an unassuming 1960’s shophouse façade, 28HKS is a word-of-mouth venue for people who might appreciate the kind of venue that we enjoy ourselves: relaxing at the beginning, growing a tad louder as the night goes on. PROOF CREATIVE CELEBRATES THE RE-OPENING OF THE GLAMOUROUS BKK SOCIAL CLUB AT THE FOUR SEASONS HOTEL BANGKOK


BANGKOK, 16 DEC 2021 – The Land of a Thousand Smiles had another reason to beam as the stunning Four Seasons Hotel Bangkok at Chao Phraya River reopens its doors to the public this month. Originally scheduled to launch in December 2020, the project has been hindered by strict Covid restrictions. Catapulting itself onto the global stage by entering at number 90 in the World’s 50 Best 2021, is the BKK Social Club, a glamourous hotel bar that speaks to Buenos Aires during its golden age of opulence, through the lens of energetic modern-day Bangkok.

Conceptualised in collaboration with Proof Creative and the renowned international Design Studio AvroKO, BKK Social Club offers Latin American-inspired drinking and a sense of escapism in the sanctuary of peace and quiet in this bustling hub of artistic Bangkok.

Earthy hues, plush fabrics and a feature vaulted & mirrored backbar at BKK Social Club

The lush interior was conceived by the award-winning team at AvroKO and centres around a stunning main room inspired by the Belle Epoque era, a dramatic and imposing mirrored backbar display and inviting velvet banquette seating for guests to enjoy. Flanking the main bar on either side are two semi-outdoor spaces; one, a haven for cigar aficionados, whilst the second is an ideal space for communal get-togethers.

The arrival experience at BKK Social Club brings you straight from the centre of Bangkok into the tranquil heart of the hotel. Large opaque glass doors open and transport you back to a snapshot of Argentinian history, while each team member engages you with a warm welcome. Plant-filled chandeliers, backrests that stretch to the ceiling, cigar rituals and a view of the hotel’s infinity pools entice guests to explore the venue at their own pace and allow for multiple interactions.

The bar program at BKK Social Club is led by the innovative Beverage Manager Philip Bischoff, a renowned bartender hailing from Germany, as an industry trailblazer he has worked in some of the world’s most awarded hotel bars, including Manhattan Bar, Singapore, and the Amano Hotel in Berlin. Philip’s has a secondary role as Beverage Ambassador for Four Seasons Hotels and Resorts APAC, providing concept direction, mixology training & menu guidance to the hotels and their teams.

Guests can expect one of Bangkok’s strongest bar teams under the tutelage of Bischoff. Drinks names and direction at BKK Social Club take their cues from the People, Places and Parties throughout the rich cultural history of Bueno Aires.

Bischoff says, ” Bangkok is putting its stamp on the world cocktail map, and I want to be right at the heart of it all – at the forefront of global mixology, innovation and craft.’

The cocktails showcase his love of traveling through their use of endemic Thai flavours; paired with artisanal spirits from throughout South America, focusing on Argentinian producers. Cocktails will be backed with an extensive offering of rare and much sought-after craft spirits, alongside a solid collection of vintage champagne.

The Pistachio Margarita was first crafted by Philip for a cocktail event in Athens and has been one of his signature serves ever since. A vibrant and citrus-forward twist on a classic, with Arquitecto Tequila as the hero spirit and bolstered with zesty Thai lime, earthy pistachio orgeat and a tart, aromatic raspberry salt.

The Evita Cocktail is a homage to the ‘Spiritual Leader of the Nation” Eva Perón, who helped shape the country through her continuous charitable and noble works. A spirituous blend of Plantation Pineapple Stiggin’s Fancy Rum, Italian Bitters, endemic citrus and a hit of spice coming from cinnamon and bay leaf. This drink has the heart of a Negroni, but the soul of a sour.

“The lives of people in Buenos Aires and Bangkok revolve around social gatherings,” says Philip; this space will be no different with bespoke communal cocktails coming in bottle sizes that scale up to magnum size and ensure a constant stream of the local high society from the city and international taste hunters.

The food offering at BKK Social Club shines a light on the culinary traditions of these two gastronomic capitals. An elevated snack menu that offers guests a glimpse of the strength in depth of the hotel’s neighbouring kitchens led by executive chef Andrea Accordi. A ‘must-try’ is the scallop & yellowtail ceviche, combining the traditional Leche De Tigre of South America with pan Asian flavours of Soursop and Lotus Root.

The opening of the new hotel and its expansive food and beverage offerings has been led by General Manager Lubosh Barta, alongside Director of Food and Beverage Vishal Sanadhya and Hotel Manager Jasjit Assi.

BKK Social Club is a project that first kicked off between the Proof Creative team and Four Seasons Hotels & Resorts in early 2019 and further strengthens the collaborative ties between the teams, stretching back to the opening of Manhattan Bar in 2014 and includes the World’s Top 50 Bars Charles. H in Seoul and Bar Trigona in Kuala Lumpur and ARGO in Hong Kong. BKK Social Club developmental work was led by Senior Bar Consultant Bobby Carey, with support from Creative Director Jason Williams.

Says Carey, “Four Seasons have consistently pushed to create innovative bars, that are local institutions of the second golden age of fine drinking; and I have no doubt that BKK Social Club will continue in that tradition. Collaborating with Lubosh, Vishal, JJ, Philip and the team has been a great experience and I wish them all the best in this iconic Four Seasons launch.”
